DESCRIPTION

Intense green herbaceous fruitiness, with a fresh hint of grassiness, tomato and almonds and a pleasant fragrance of the artichoke heart. Spicy intensity and barely noticeable bitter note.

Produced on hilly land, 5 km from the sea (average altitude 110 meters above sea level).

Hand-picked, selected in early October, led by the most experienced collaborators. Guided collection following careful agronomic analysis by the state of the best specimens having reached maturity.

5,000 lt stainless steel silos at a controlled temperature of 15 °.

EXTRACTION METHOD

First harvest of entire the olive grove, within 10 hours of harvest, decanted and stored in separate silos.

Cold pressing obtained solely by mechanical processes.

FRUITINESS

Medium intense.

PAIRING

Ideal for meat and fish first courses. Perfect for risotto with fish sauces or with asparagus sauces.

Equally versatile as a cold dressing on fresh vegetable dishes, in particular on arugula lettuce, valerian lettuce, gentile lettuce, tomato, fennel and Savoy cabbage). It adds very pleasant distinctive flavors on second courses of fish cooked in foil. A must on traditional Sicilian caponata recipes.
